Brown champignons (Agaricus bisporus)
Photograph by C. Ferrara, 2011

Brown champignons were the original form of the species, with the familiar white variety appearing later through selective cultivation. Their colour deepens as they grow, which is why the same mushroom can be sold as button, cremini or portobello depending on its stage of maturity.
